Chess Pie

Chess pie is one of my favorite pies but the traditional pie made with vinegar just didn't work out for this recipe.  I changed the vinegar for fresh lemon juice and I think it really gave my pie a great taste.  I think you will agree.



1 cups sugar
1 stick butter
2 tablespoons cornmeal
2 tablespoons fresh lemon juice
3 tablespoons whole milk, evaporated
2 teaspoon vanilla
3 eggs
Unbaked Pie Shell

Cooking Method

Cream Sugar and Butter.

  1. Mix in all remaining ingredients.  Blend well.

  2. Pour into pie shell. 

Bake in at 375 on the bottom rack of the oven for 15 minutes; reduce heat to 350 and bake 20 minutes longer.
