Fried Chicken Southern Style with Character

I like a lot of black pepper on my fried chicken.  This particular version of fried chicken also include a crusted breading with lots of hot sauce.

 

Ingredients


3 large eggs
⅓ cup water
1 cup hot red pepper sauce, prefer Crystal Brand
3 cups self-rising flour
1 teaspoon black pepper
1 chicken, cut into pieces
salt and pepper
oil , for frying, preferably peanut oil

Cooking Method


In a medium size bowl, beat the eggs with the water. 

  1. Add the hot sauce. 

  2. The mixture will be an orange color.

In another bowl, combine the flour and black pepper.

  1. Season the chicken with salt and black pepper.

  2. Dip the seasoned chicken in the egg mixture, and then coat well in the flour mixture.

Heat the oil to 350 F in a deep electric skillet (at least 2" deep) or chicken cooker. 

  1. Do not fill the pot more than full with oil.

  2. Fry the chicken in the shortening until brown and crisp. 

  3. Remember that dark meat takes longer to cook than white meat. 

  4. Fry until golden and crispy.
