House of Plenty's Turtle Pie

Thom Hackett

Original Recipe from House of Plenty, Highland, Illinois

Serves:  8

Pie

This recipe is a house specialty at the House of Plenty restaurant in Highland, Illinois.  Owner Judy Ernst is happy to share the recipe as she says that her Manager Debbie Poehling and her combined some of their favorite ingredients.

Ingredients

1 cup semisweet chocolate chips (6 ounces) divided
cup pecans, chopped
1 pastry shell (9 inches) baked
cup caramel topping
2 (8 oz. packages) cream cheese, softened
cup confectioners sugar
2 tablespoons whipping cream
whipped cream, and additional chocolate chips, pecans, & caramel for garnish

Cooking Method

Sprinkle cup of chocolate chips and pecans into pastry shell.  Pour caramel topping over chips and pecans.  In a mixing bowl, beat cream cheese and sugar until smooth.  In a saucepan over low heat, cook and stir cream and remaining chips until smooth.  Gradually add to the cream cheese mixture; mix well.  Carefully spread into pastry shell.  Garnish as desired
