 Organic Muffins

Makes:  12-15

 

 

I use all organic ingredients to make these muffins.

 

 

Ingredients


2 cups freshly ground spelt, kamut or whole wheat flour
2 cups buttermilk, kefir or yoghurt
2 eggs, lightly beaten
teaspoons Celtic Sea salt
1 tsp. Baking soda
2 Tablespoons Melted butter

 

Cooking Method


Soak flour in buttermilk, kefir or yoghurt in a warm place for 12 to 24 hours.

  1. Muffins will rise better if flour is soaked for 12 to 24 hours. 

  2. Blend in remaining ingredients. 

  3. Pour into well-buttered muffin tins (preferably stoneware), filling about three quarters full. 

  4. Bake 325F for about 1 hour or until a toothpick comes out clean.
