Pea Soup

This is a very hearty and tasty soup. It is great for a cold winter evening. It is also quick and easy to prepare.



cup butter
4 cups lettuce, shredded
large red onion, chopped
1 tablespoon all-purpose flour
1 teaspoon sugar
teaspoon ground coriander
3 (14 oz. cans) condensed chicken broth
2 (10 oz. package) frozen peas
1 cup milk

Cooking Method

In large saucepan over medium heat, in hot butter, cook lettuce and onion until tender, stirring often.

  1. Add flour, sugar, coriander. 

  2. Slowly stir in broth.

  3. Add peas.

  4. Cook, covered 15 minutes.

  5. In blender, blend mixture, a cup at a time.

  6. Return to pan.

  7. Add milk.

  8. Heat.
