This is a very hearty and tasty soup. It is
great for a cold winter evening. It is also quick and easy to prepare.
4 cups lettuce, shredded
½ large red onion, chopped
1 tablespoon all-purpose flour
1 teaspoon sugar
¼ teaspoon ground coriander
3 (14 oz. cans) condensed chicken broth
2 (10 oz. package) frozen peas
1 cup milk
In large saucepan over medium heat, in hot butter, cook lettuce and
onion until tender, stirring often.
Add flour, sugar, coriander.
Slowly stir in broth.
Cook, covered 15 minutes.
In blender, blend mixture, a cup at a time.
Return to pan.
