Smoked Salmon and Arugula Salad

Servings: 1-2






2 cups arugula
1/3 cup celery, chopped
1/2 apple, peeled, cored and cubed
1 tbsp chopped walnuts (or more to taste)
2 oz smoked salmon, cut into stripes
2 tbsp Skinny Green Grapes Dressing


Skinny Green Grapes Dressing:

1 1/3 cups seedless green grapes
2 tbsp white wine vinegar
2 tsp olive oil
1 tsp Dijon mustard
Salt and pepper to taste

Cooking Method

Arrange arugula in a plate.

Top with celery, apple, walnuts and smoked salmon.
Drizzle with dressing and enjoy


Skinny Green Grapes Dressing:

Combine all the ingredients in a blender and blend until perfectly smooth.
