Spaghetti and Beef Casserole

3 tablespoons olive oil
2 pounds ground beef
2 medium onions, chopped
2 (4 oz. cans) stems and pieces, mushrooms, undrained
2 (8 oz. cans) tomato sauce
1 (6 oz. can) tomato paste
1 teaspoon ground oregano
14 ounces spaghetti, package
1 (8 oz. package) cream cheese, softened
2 cups cottage cheese
1 teaspoon garlic powder
˝ cup fresh chives
˝ cup sour cream
˝ cup buttered bread crumbs

Cooking Method

Heat oil in heavy skillet...

  1. Add ground beef and onion. 

  2. Sauté until browned, stirring to crumble; drain.

Combine mushrooms, tomato sauce, tomato paste, oregano, and garlic powder.

  1. Add to meat mixture. 

  2. Mix well.

  3. Simmer, uncovered, 15 minutes.

Cook the spaghetti according to package directions; drain. 

  • Place half of the spaghetti in a buttered 13x9x2 inch baking dish.

Combine cream cheese, cottage cheese, chives and sour cream; mix well. 

  1. Spoon cheese mixture over spaghetti layer, spreading evenly.

  2. Place remaining spaghetti over cheese mixture. 

  3. Pour meat sauce over spaghetti; sprinkle with bread crumbs. 

  4. Bake at 350° F for 30 minutes or until bubbly.
